Grilled Mac & Cheese Sandwich
Do you know somebody who adores grilled cheese sandwiches? Somebody who’s also a nut for macaroni & cheese? The two favorites are combined in this surprising (and surprisingly yummy) dish.

Ingredients
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine + additional for bread
- 8 slices bacon (optional)
- 8 slices bread (white or whole wheat)
- 1 c. shredded Cheddar cheese
- Chips (optional)
- Pickles (optional)
Instructions
- » Prepare the macaroni & cheese according to box directions.» While macaroni is cooking, cook bacon in a separate pan to the level of crispness you like. Drain bacon on paper towels.» Spread margarine on one side of each piece of bread.» Assemble sandwiches: Turn the first piece of bread so the margarine side is facing down. Top with a generous layer of mac & cheese. Add 2 slices bacon. Sprinkle with 1/4 c. Cheddar. Put second piece of bread on top, margarine side out. Repeat for 3 more sandwiches.» Cook sandwiches over Medium heat, in a fry pan or on a griddle. When the first side is nicely browned, flip and cook the second side. Be careful when moving and flipping so the mac & cheese stays together.» Serve with chips and pickles.
- Variations» Garlic – Skip the bacon. Sprinkle garlic salt lightly on each side of the sandwiches as they’re cooking.» Open Face – Eliminate top slice of bread. Cook sandwich in oven or microwave until cheese on top is melted. You could add a tomato slice to each sandwich, or sautéed mushrooms.» Mustard – Spread your favorite mustard on the bread (opposite side from margarine) before assembling sandwich.» Different Cheese – Try American cheese, Jack, or Mozzarella instead of Cheddar.
