Pepper Steak Mac & Cheese
Meat, vegetables, pasta, and dairy products - this recipe has them all.

Ingredients
- 3/4 lb. boneless beef
- 1 tbsp. olive oil
- Salt and pepper
- 1/4 c. chopped onion
- 1 large clove garlic, minced or pressed
- 1 c. beef broth
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
- 1/2 red bell pepper, seeded and cut into strips
- 3/4 c. frozen green beans
- 1 c. canned sliced stewed tomatoes, drained
- 3 tbsp. cornstarch
Instructions
- » Cut beef in strips 1/4-inch thick, 1/2-inch wide and 2-inches long, removing as much fat as possible.» Heat oil in a large skillet, and brown beef over Medium-high heat. Season beef with salt and pepper while it’s cooking.» When beef is browned, remove it with a slotted spoon to a bowl.» Lower heat to Medium. Add onion and garlic to skillet, and sauté until onion is translucent. Add more oil if necessary.» Return beef to skillet, and add beef broth.» Cover skillet, and simmer for 25 to 30 minutes, until beef is tender.» While beef is simmering, prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.» Add pepper, beans, and tomatoes to skillet. Cover, and simmer 10 minutes.» Mix corn starch with 1/4 c. cold water, then stir into skillet mixture.» Cook uncovered, stirring frequently, 5 minutes or until thickened.» Season beef mixture with salt and pepper to taste.» Serve macaroni & cheese topped with beef.
