Mac & Cheese Primavera

Ingredients
- 1 box macaroni & cheese
- 1/4 c. milk
- 1 tbsp. olive oil
- 1 tbsp. butter
- 1 clove garlic, minced or pressed
- 1/2 c. red bell pepper, seeded and diced
- 1/2 c. zucchini, halved lengthwise and sliced
- 1/2 c. broccoli florets
- 1/2 c. cauliflower florets
- 1/4 c. grated Parmesan cheese plus extra to top
- Salt and pepper
- 2 tbsp. finely chopped fresh parsley
Instructions
- » Prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.» While macaroni is cooking, heat oil and butter in a large skillet over Medium heat.» Add garlic to skillet, and cook 1 minute.» Add all vegetables to skillet. Season vegetables with salt and pepper.» Cook vegetables, stirring occasionally, for 6 minutes, or until tender.» After macaroni & cheese is prepared, stir in the vegetables, and 1/4 c. Parmesan cheese.» Add salt and pepper to taste.» Serve macaroni & cheese topped with parsley and additional Parmesan as desired.
- VariationsYou can use different combinations of vegetables. Almost anything goes, just use a total of 2 cups of vegetables. The following all work well: Tomatoes, Green beans, Yellow crookneck squash, Green bell pepper, Snow peas.
