Fifteen years ago I published a cookbook for macaroni and cheese. I decided it should be more than a bunch of recipes, but it should reflect the soul of macaroni and cheese. What is the soul of macaroni and cheese? You already know: it’s a smile.
That cookbook, More Please! Macaroni & Cheese, contained a ton of research, much of which is here on this website, and also a generous side of light-hearted humor and good nature. My co-author, Deanna Keahey, was a master of cooking research and organization and I think it’s safe to say we published the most comprehensive and fun mac n cheese cookbook known to civilization at that time.
And now, at the end of 2018, I’ve got something else to say. I want macaroni and cheese to help people. How would it help people?
First, from a dietetic point of view you do not need to be afraid of mac n cheese. In fact, this is a dish that can deliver excellent nutrition. My new collaborator, Laura Minighini, is not only a Registered Dietitian, full of scientific and medical knowledge about nutrition, diet and health, but is also a native Italian, born and raised in Rome, Italy, and stuffed full of tasty, healthy pasta dishes from the world of Mediterranean diets. On this website we aim to help you find your way to Healthy Mac n Cheese when you want to eat smart, and also, sometimes, let’s call it, Party-Time Mac n Cheese for when you just want to dig in and indulge. And let’s just admit, we’ve also got what we could call Lazy-Bones Mac n Cheese, when you just wanna eat it.
Second, from a family point of view, budgets are strained these days for many, many people. We need ways to deliver nutrition that give satisfaction, health, convenience and good spirit. On this website we want to help you find recipes and products to create convenient, money-minded, family-healthy meals. We will inform you about products and methods to get you there, whether it’s our own products or other people’s products.
