Broccoli Cheese Casserole
Broccoli blends perfectly with the macaroni & cheese in this terrific dish. This recipe serves 4 as a main dish (perfect with a salad), or 8 as a side dish.Serves 4 to 8
Ingredients
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
- 2 c. broccoli florets
- 3/4 c. diced onion
- 1 tbsp. olive oil
- 3/4 c. shredded Cheddar cheese
- Salt and pepper
- 1 c. milk
- 2 eggs
- 2 tbsp. dry breadcrumbs
Instructions
- » Preheat oven to 350 degrees.» Prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.» While macaroni is cooking, sauté onion in olive oil until softened.» Add broccoli, onion and 1/2 c. Cheddar to macaroni & cheese, mixing thoroughly. Season with salt and pepper to taste.» Put mixture in a casserole dish, smoothing the top.» In a bowl, beat milk and eggs until combined well.» Pour milk mixture over macaroni.» Sprinkle top of casserole with remaining 1/4 c. Cheddar and breadcrumbs.» Bake 40-45 minutes, or until surface turns golden.Variations» Fastest and easiest - Drop broccoli in the cooking water 2 minutes after macaroni. Drain broccoli and macaroni together, prepare according to box directions, and then proceed with recipe. After stirring in the onions, Cheddar, and seasonings, just eat it directly. Skip the milk, eggs, breadcrumbs and baking. It’s all done in 15 minutes!
