Cottage Cheese Mac & Cheese
This recipe has a lighter texture and taste. Try it with with one or more of the optional flavorings and toppings.

Ingredients
- 8 oz. dried elbow macaroni
- 1 egg
- 2 c. cottage cheese
- 1 c. sour cream
- 1 1/2 c. (6 oz.) sharp Cheddar, shredded
- Salt and pepper
Instructions
- » Preheat oven to 350 degrees.» Cook macaroni in boiling, salted water, until al dente. Drain.» In a large bowl, beat egg lightly.» Add cottage cheese, sour cream, and Cheddar to the bowl, and mix well.» Add macaroni to bowl, and mix well.» Season with salt and pepper to taste.» Spray baking dish with non-stick spray. » Place macaroni mixture in baking dish, patting down evenly.» Bake 30-40 minutes, or until bubbly and top begins to brown.
