Mac & Cheese Fiesta
Mexican flavors liven up this colorful supper dish. Serves 4 to 6
Ingredients
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
- 1 lb. ground beef
- 1 pkg. taco seasoning mix
- 1 large Roma tomato, sliced crosswise
- 1 c. shredded Jack cheese
- 2 tbsp. sliced black olives
- 1/2 avocado
- 1/2 tsp. lemon juice
- 2 tbsp. chopped fresh cilantro
- Salsa (optional)
- Sour cream (optional)
Instructions
- » Preheat oven to 375 degrees.» Prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.» While macaroni is cooking, cook ground beef in a large skillet over Medium heat, crumbling it apart as it cooks.» Cook beef, stirring occasionally, until well browned.» Drain off excess grease.» Mix taco seasonings with beef according to package directions. » Place macaroni & cheese in bottom of a baking dish. Top with ground beef mixture.» Arrange tomatoes on top of beef, and then spread shredded cheese evenly on top, followed by olives.» Bake for 25 minutes, or until cheese is bubbly.» While dish is baking, peel, pit, and slice avocado.» Toss slices with lemon juice so they don’t turn brown.» Remove dish from oven when ready. Arrange avocados slices between tomatoes, and sprinkle top of dish with chopped cilantro.» Serve garnished with salsa and/or sour cream.
