Mac & Cheese with Tomatoes, Olives and Goat Cheese
Goat cheese with your macaroni? It makes all the difference in this quick and easy recipe filled with bold Mediterranean flavors.

Ingredients
- 2 Roma tomatoes, seeded and chopped
- 3 tbsp. drained and chopped sun-dried tomatoes in oil
- 1/4 c. Kalamata olives, pitted and chopped
- 1 clove clove garlic, minced
- 1 tbsp. extra virgin olive oil
- 1/2 tbsp. balsamic vinegar
- 1/2 tsp. dried thyme
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
- 3 oz. mild goat cheese + additional for top
- Salt and pepper
- 1 tbsp. chopped fresh parsley
Instructions
- » Combine fresh and dried tomatoes, olives, garlic, olive oil, vinegar, and thyme in a glass bowl. Stir to mix well, then let stand at room temperature.» Prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation. After mac & cheese is prepared, place it back in pot.» Add 3 oz. goat cheese to macaroni. Cook briefly over Low heat, stirring, until cheese is melted and mixture is smooth.» Season macaroni with salt and pepper to taste.» Put macaroni & cheese on plates. Spoon tomato-olive mixture over macaroni, and sprinkle remaining goat cheese and parsley on top.
