Mac & Cheese with Zucchini, Basil, and Parmesan
Even non-zucchini-fans have been known to say this dish is delicious!
Servings: 3 people
Ingredients
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
- 1 medium-large zucchini, halved lengthwise then sliced
- 1 tbsp. olive oil
- 3 tbsp. chopped fresh basil leaves + 6 whole basil leaves
- Salt and pepper
- 1/2 c. grated Parmesan cheese
Instructions
- » Prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.» While the macaroni is cooking, sauté the zucchini slices in olive oil over Medium-high heat, until starting to brown. Sprinkle zucchini with salt and pepper as it cooks.» Reserve 6 nice basil leaves for garnish, and chop enough to give 3 tbsp. chopped basil.» When mac & cheese is prepared, add zucchini, chopped basil, and 1/4 c. of the Parmesan, combining thoroughly.» Season with salt and pepper to taste.» Divide macaroni among serving dishes.» Sprinkle remaining Parmesan over each dish, and garnish with reserved basil leaves.
- Variations» Use different herbs – fresh parsley, thyme or oregano would give this dish quite a different flavor.» Add 2 Roma tomatoes, seeded and chopped.» Substitute yellow squash or pattypan squash for zucchini.
