Meatballs - Mexican
These meatballs have Mexican spices, and are simmered in a tomato-based sauce.

Ingredients
- 1 pkg. taco seasoning
- 1/4 c. fine fresh breadcrumbs
- 1 egg, beaten lightly
- 1 lb. ground beef, or combined ground beef and pork
- Salt and pepper
- 2 tbsp. olive oil
- 1/2 large onion, chopped
- 1/2 red bell pepper, seeded and chopped
- 1/2 green bell pepper, seeded and chopped
- 1 can (14-1/2 oz.) crushed tomatoes
- Tabasco® sauce
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
Instructions
- » Combine taco seasoning and breadcrumbs in a large bowl.» Add ground meat and egg to bowl, and combine all ingredients well.» Shape the meat into walnut-sized meatballs.» Heat olive oil in a large skillet, and sauté the onion until softened.» Add green and red bell peppers, and sauté until peppers are softened.» Add tomatoes to skillet with 1/3 c. water, and stir to mix well.» Add enough Tabasco® sauce to reach desired spiciness, and season with salt and pepper to taste.» Add meatballs to sauce. Cover skillet and simmer 30 minutes, stirring occasionally.» While meatballs are simmering, prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.» Season macaroni with salt and pepper to taste.» Serve macaroni & cheese with meatballs and sauce on top.
