Sloppy Corn Checkerboard
This dish looks harder than it is, but the components are each quite easy to make.Serves 4 to 6
Ingredients
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
- 2 1/2 c. shredded Jack cheese
- 1 lb. ground beef
- 1 can Sloppy Joe seasoning
- 3 c. frozen white corn
Instructions
- Prepare components» Prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.» Stir 1/2 c. Jack cheese into macaroni, reserving the other 2 c. for the corn.» While macaroni is cooking, brown ground beef, breaking it apart into small pieces as it cooks.» When beef is well browned, drain off excess grease.» Mix Sloppy Joe seasoning into ground beef.» While beef is cooking, heat the corn in a small pot over low heat.» When corn is hot, add the reserved 2 c. Jack cheese. Stir until cheese is fully melted and evenly distributed.Assemble and Bake» This recipe could use two 13-inch x 9-inch baking dishes, or just one, depending on how you scoop the ingredients.» For optimal preparation, use a separate serving spoon for each of the three components.» Place a large spoonful of each component into the baking dish, one after the other in a row. See picture for finished pattern.» For the checkerboard pattern, place one row at a time, always alternating the components in the same order: Sloppy Joe, mac & cheese, corn, etc.» Start each row with the next component in sequence. If one row started with Sloppy Joe, the next row should start with mac & cheese, etc. Keep following the same pattern until the dish is filled.» Bake 10 to 15 minutes, or until the cheese in the corn starts to bubble.
