Wild Mushroom Mac & Cheese
This is a richly flavored mushroom dish, accented with garlic, sherry and thyme.Serves 3 to 4
Ingredients
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
- 1/2 lb. fresh button mushrooms, sliced
- 1/2 lb. mixed fresh wild mushrooms (such as shiitake, chanterelle, porcini, or portobello), sliced
- 1 c. finely chopped onion
- 2 tbsp. olive oil
- 2 cloves garlic, minced or pressed
- Salt and pepper
- 1/2 c. dry sherry
- 1/4 tsp. dried thyme
- Fresh parsley, minced, to sprinkle on top
- Grated Parmesan to sprinkle on top
Instructions
- » Prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.» If you’re using large wild mushrooms, cut them into pieces about the same size as the sliced button mushrooms.» In a large skillet, sauté the onion in olive oil, over Medium heat until softened.» Add garlic to the skillet, and sauté 1 minute.» Add mushrooms to skillet, and season with salt and pepper. Cook, stirring occasionally, until the mushrooms have given off their liquid (about 10-15 minutes).» Add sherry and thyme to skillet. Simmer 5-10 minutes, until liquid is greatly reduced.» Season mushrooms with salt and pepper to taste.» Serve the macaroni topped with the mushrooms.» Sprinkle parsley and Parmesan on top.
